Transport yourself back to the time of the classics. We revisit them with a vision adapted by the Cep Club. Notes of the "savoir à faire" of times we are happy to remember. Aromas that are tertiary, derived from the aging of wines in wooden barrels. Tannins mark the tactile sensation in the mouth, and aromas of forest fruits, toffee, leather, skin... on the nose. In general, the designations of origin have adapted terms such as "crianza", "reserva", and "gran reserva", wines of all qualities. Only by considering the time these have remained in the barrels, and since these are concepts we consumers use, we want to explain them as best we can. In short, we can have a RESERVA wine that is of worse quality than a YOUNG wine. Why? Because the quality of a wine is determined by the origin of the grape, not the time it spends in the barrel. A simple consideration, but one that often leads us to mistakes when choosing a wine, especially when we want to prepare a pairing.
In this selection, however, we offer options for FINE WINES aged in wooden barrels. Different appellations and grape types, all under the same concept of wine. Aspects such as the age of the barrels, the extraction of the grapes during the fermentation process, as well as the type of grape and region, will determine the differences within this specific profile of red wines.
