Sherry wines are mainly divided into two categories: fortified wines and sweet wines.

Generous Wines : Within this category, we find several subtypes:
- Fino : A dry, light wine that develops under a layer of flor, a type of yeast that protects the wine from oxygen.
- Manzanilla : Similar to Fino, but produced in Sanlúcar de Barrameda, with a more saline character.
- Amontillado : Starts out like a Fino, but undergoes oxidative aging, giving it a more complex, nutty flavor.
- Oloroso : This wine does not form flor and is oxidized from the beginning, resulting in a more robust and aromatic wine.
- Palo Cortado : A rare wine that combines the characteristics of Amontillado and Oloroso, offering the best of both worlds.
Sweet Wines : These wines are made from raisins, which gives them a natural sweetness:
- - Pedro Ximénez : An extremely sweet wine, made from sun-dried grapes, offering intense notes of raisins and caramel.
  - Cream : A sweet wine that is usually a blend of Oloroso and sweet wine, with a balanced profile.
