These are difficult-to-access vineyards where heroic viticulture is practised with biodynamic precepts and very low yields. The harvest is carried out manually in 15 kg boxes at the optimum moment of ripeness.\u003c\/span\u003e\u003cbr\u003e \u003cbr\u003e\u003cspan\u003eIn the winery, 20% of the\u003c\/span\u003e \u003cstrong\u003eDaterra Portela do Vento\u003c\/strong\u003e grapes \u003cspan\u003eare destemmed. This is followed by a 10-day maceration on the skins and spontaneous fermentation with native yeasts in stainless steel tanks. Finally, the wine ages for 11 months in 500-litre French and chestnut oak barrels.
