How are they made? Why are they different from other traditional sparkling wines like Cava, Corpinnat, Champagne, etc.

Unlike the Metode Champenoise wines, these Ancestral wines are transferred from the fermentation tank to the bottle when they reach a specific sugar level; that is, they are halfway through alcoholic fermentation (the sugars in the must are converting into alcohol).

Once this half-fermented "Mosto" is in the bottle, a second fermentation occurs, where carbon dioxide and bubbles appear, resulting in a sparkling wine. THE ANCESTRAL. Larger bubbles, fruit, yeast... a new world of sensations.
